Remember those days of sipping hot chocolate with bibingka and puto bumbong right after attending Simbang Gabi? Well, it’s time to give those memories an interesting twist by grabbing a holiday inspired cocktail courtesy of DrinkManila.com’s resident mixologist Icy Marinas. “I would always remember how crisp Christmas air would feel and how it would smell like too. I remember it would smell of fresh bibingka being baked beside the church. I always looked forward to that as a child, so it was only natural that my idea first veered towards making a bibingka inspired cocktail. I wanted to bring that particular childhood memory in a glass,” she says.

Cocktail lovers need not worry about the carbs anymore as you can now have bibingka in a different form! Well, sort of. “Christmas is always super fun and we are featuring so many special cocktails coming from the best bartenders in the metro. I designed a drink called 'Hulog ng Langit,' inspired by Apo Hiking Society’s song 'Himig Ng Pasko.' It is a bibingka-flavored Ramos Fizz Cocktail. The rice cake, coconut, and burnt banana leaves are prevalent flavors, it's even garnished with an itlog na maalat!” she shares.
Aside from the classic bibingka, Icy has also taken other elements from the season in her other drinks featured this month on their site. “I also made a S’mores old fashioned, as this season reminds me of winters Ive spent in Europe gathered around fire places and toasting marshmallows with friends and family over a cup of chocolate as a kid. Fast forward to adulthood, add this to an old fashioned and makes me think why didn’t I make this sooner. The comfort from this drink is priceless,” she adds.

Hulog ng Langit
- 60 ml gin
- 15 ml lemon
- 15 ml lime
- 30 ml vanilla syrup
- 15 ml coconut cream
- 5 ml condensed milk
- 3 drops orange water
S'Mores Old Fashioned
- 45 ml Jack Daniel’s
- 10 ml Kahlúa
- 2 dashes chocolate bitters
- 2 dashes orange bitters
- 1 barspoon candy cane syrup
- 30 ml Okinawa gin
- 15 ml lemon juice
- 20 ml Cardamom, pear, and chardonnay syrup
- 2 dashes Jerry Thomas Bitters
