Five Noli and Fili-Inspired Desserts That Will Intrigue Your Palates

You wouldn't think that the desserts at Restaurante Pia Y Damaso would be any different from those in other restaurants or cafés.  Then again, just like in Jose Rizal's novels, things aren't always what they seem. Here are five desserts that will surely intrigue your tastebuds and leave you feeling satisified:

Bibingka Waffle. Yes, it's a waffle but it isn't your usual everyday breakfast waffle fare. It's actually made of lovely bibingka batter.  For starters, the presentation was a nice touch on the otherwise traditional bibingka form. Mixing in goat cheese (Malagos) in the batter together with queso de bola and salted egg intrigued my palate to no end. It was both familiar and unfamiliar at the same time.


De Espadana Quezo de Bola Cheesecake. If your palate is ready for something beyond what's currently out there, I suggest you try this. It's velvety soft-baked cheesecake but instead of the usual blueberry, this one, being subversive and all, has santol, prunes, and fig compote.  Totally radical, right?  The best part of it all?  It works. It’s a definite must-try in my book.


Toasted Yema Parfait. I have tasted yema many times over but it was the first time it was served in an almost unrecognizable form.  Available for a limited time, this is yema incorporated in several layers of smooth and frozen goodness.  Cookie crumbs are added to provide textural contrast to the velvety dessert.


Sapin Sapin. It's layered steamed glutinous rice flavored with coconut milk, pumpkin, and purple yam. I have had this colorful Filipino dessert before but I never quite had that liking for it. Busting with color but of little taste, Chef Bambi definitely won me over with her own recipe of the sapin sapin.  It was beautifully plated, not overly colorful, not overly gooey, creamy and very yummy.


Ube Sansrival. If you can't decide between a slice of ube cake or a sansrival for dessert, then this is perfect for you.  Indulge in the comforting flavor of yam and the creamy butter while you cut your teeth across the beautiful layers that sansrival is known for. Strips of sweet jackfruit make this creation all the more heavenly.
