The Many Ways You Can Enjoy Oysters

It’s a place you troop to when you’re craving for all sorts of Filipino food, but once upon a time, before the extensive menu of Pinoy comfort food, Via Mare was actually a seafood specialty restaurant. Established by culinary expert Glenda Rosales-Barretto in 1975 (yes, it’s celebrating its 40th anniversary this year!), it has become part of many Filipino occasions, both small scale (family reunions, birthday, etc.) and large scale (state dinners, among others, and this year’s APEC Summit to be held here in Manila). Seafood remains an integral part of their menu, though, and their mouthwatering oyster dishes, made of large, top quality oysters, are best not missed:

Oyster Boursin. Mrs. Barretto’s personal favorite, it’s the lethal combo of garlic and three cheese—melt in your mouth goodness with a kick.


Oyster Duxelles. Minced mushrooms, shallots, and a mix of herbs and spices topped on sumptuous oysters, this is a must-try if you’re looking for a gastronomic surprise.


Oyster Rockefeller. You’ll never go wrong with a classic, and with the hefty toppings on this version, mealtime will be more delightful.


Oyster Wasabi. If you think you know what to expect because it’s wasabi, think again. The way the flavor of the oyster, the cheese, and the wasabi meld yields a totally different and exciting taste.
