Judy Ann Santos-Agoncillo's Strawberry Mojito is your Pica Pica's Perfect Match

"Ryan and I treasure times when friends come over to relax and be themselves with us. This means walang sawang kainan, chikahan, at tawanan! This is also convenient for us na mag-asawa because, aside from our unpredictable schedules, we hardly go out because we train early in the morning most days," shares Judy Ann Santos-Agoncillo in her cookbook, Judy Ann's Kitchen. Besides her family, her friends also serve as inspiration to her cooking and she adds that no matter how late the parties they host at home finish, she and Ryan still go to bed all smiles and truly grateful to have their barkada around.

In the midst of the various recipes of sumptuous appetizers, main entrées, snacks, and desserts in her cookbook, Juday spills the secrets behind her in demand Strawberry Mojito Cooler, which, she says, is the perfect drink to go with pica pica and grilled meats:


For the sugar syrup

1/2 cup white sugar

1/2 cup water

For the mojito cooler

crushed ice

1/2 bunch mint leaves, coarsely torn

juice from two pieces fresh lemons

1/2 cup sugar syrup

1/2 cup white rum

2 cans of club or white soda

8 pieces fresh strawberries, cubed


For the sugar syrup

1. Place sugar and water in a small saucepan.

2. Over medium-low heat, stir mixture until sugar is completely dissolved.

3. Remove from heat and set aside.

For the mojito cooler

1. Fill a glass pitcher halfway with crushed ice.

2. Add mint leaves, lemon juice, and sugar syrup. Slightly mash mint leaves with a blunt instrument or a muddler to release the oil from the leaves.

3. Stir in rum and club soda until the sugar has dissolved. Blend in strawberries and mix well.

4. Serve in individual glasses. Add more ice if desired.
