Your Local’s approach to food is all about creating balance and harmony among different flavor profiles while leaning heavily on Singaporean and Japanese cuisines. While Nicco loves Singapore for its robust flavors and multi-ethnic mix, he adds, “I have always admired Japanese cooking because of the mastery of skill required andtheir profound understanding of creating balanced dishes which have a certain clean, minimalist palate.” It’s that “minimalist” touch that informs many of the dishes on Your Local’s menu, but without sacrificing full-on flavors. Inspiration came from  chefs and home cooks overseas with whom Nicco mentored, including Japanese cook who taught him about their ingredients, techniques and food.

While Denny Antonino and Matt Lim handle operations at Your Local, Nicco takes charge of creating new dishes. And while he won’t claim that Your Local’s food is 100% healthy, his philosophy of balanced flavors really translates to a balanced lifestyle as well. He shares, “I like to have balance;  in my life and in my food. I am always trying to find that harmony between flavors.”
