The Italian pasta staple just got a twist that will make your hot summer days better. Never in our wildest dreams did we think that spaghetti can be as great when cooled.
Chilled Summer Spaghetti
Ingredients for dressing:
2 cups Greek yogurt
1 yellow onion, minced thinly
1 cup cucumber, seeded and diced
1 cup tomato, seeded and diced
1 cup pineapple tidbits, drained
1 cup fresh ripe mango, diced
1 cup boiled or grilled chicken, diced
4 tablespoons honey
ARLA Diced feta cheese
Salt and white pepper to taste
500 grams spaghetti, cooked al dente
1. Cook pasta and then drain. Toss it with a little olive oil, then let it chill.
2. Season yogurt with honey, onion, and white pepper.
3. Toss the yogurt over the pasta and then add and mix all other ingredients.
