A bit of that fresh summer feel will always lift up our spirits and make us kook forward to brighter days ahead. Summer also screams fruits and mangoes are top of mind! While usually have them in refreshing shakes to sip, this very easy no-bake recipe provide a unique, but equally exciting, twist to this in demand summer fruit:
½ cup dates
½ cup pili nuts
2 tablespoons cinnamon
½ teaspoon nutmeg
2 tablespoons water
pinch of salt
sliced mangoes, for topping
1. To make the crust, process the dates in a food processor. Add the pili nuts, cinnamon, nutmeg, water, and salt. Add a tablespoon more water if the mixture is too dry.
2. Using a measuring spoon, spoon 1 tablespoon of cinnamon pastry mix into each hole of a small cupcake tray. Mold with your fingers into small tart shapes.
3. Spoon the jelly (recipe below) into each tart and tp with additional mango slices. Serve.
½ cup mango or any other fruit
½ teaspoon calamansi juice
1 tablespoon flax meal
1 teaspoon sweetener of choice
1. Blend all the ingredients until smooth.
