We Filipinos do love food, and it becomes better when the dishes are given an extra dash of sophistication.
This is the concept of C2 Classic Cuisine, which specializes in making our favorite Filipino meals close to home with their own spin to it. They do have multiple branches around the Philippines, but for this feature, we focused on their branch at Summit Ridge Hotel in Tagaytay.
One of the country's most popular vacation capitals, Tagaytay is a place many love to frequent for its cold weather and chill atmosphere. Good food also abound, like those at C2 Classic Cuisine, which we got to try:
Their Tokwa’t Baboy has a balanced mix of pork bits and fried tofu, and is complemented by savory soy sauce.
Next, their Chicken Pork Adobo, adorned with thin strips of fresh mango, has a taste that is just right in terms of saltiness, something that Filipinos will definitely love.
Their Crispy Chicken, with fried strips of molo wrapper and shredded carrots and singkamas as sidings, is juicy and tender on the inside, but also boasts of crunchy chicken skin.
The highlight has to be their Crispy Pata: Thanks to its tender meat and crunchy skin, it has becomes among the must-try meals at C2 Classic Cuisine.
Lastly, their Fried Sumpia, which is essentially a fried vegetarian spring roll, is a must-try. It tastes so authentic, you'll forget that it's made of vegetables—definitely vegetarian-approved.
Overall, even if the prices of C2 Classic Cuisine’s meals are a bit on the premium side, with their unique spin on these classic Filipino dishes, it's definitely worth splurging on.
