Starting off, Nene layers the bottom of the pot with garlic and laurel leaves to add flavor to the bangus pieces. After that, she arranges bangus chunks in layers, noting that there should be a one inch spacing.
After that, around six cups of olive oil, in addition to the sauce, is added to firm up the bangus chunks and improve its texture.
