Dried Mangoes and Chicken Baguette Sandwich
1/4 cup red bell pepper
1/2 cup mayo
1/8 cup of olive oil
1/2 tsp salt
1/2 tsp pepper
1 tsp minced garlic
1 tsp ginger
1 tbsp cayenne
6 thick slices of baguette bread, cut on a diagonal,
6 thick slices of roasted deli chicken breast
8 slices of dried mango
1. Place the bell peppers pepper, mayo, salt, garlic, and cayenne in a blender or food processor and blend until fine.
2. Spread the spicy red pepper sauce over the toasted baguette bread and top with a slice of deli chicken. Top with a hydrated mango, and then finish with a few pieces of lettuce.
