Metro rediscovered a new gem in heritage restaurant, Hiyas, one of the newest Filipino restaurants in town. Hiyas specializes in Pinoy comfort food with a twist, which functions under the guidance of restaurant owner and manager Francis Maneja and Executive Chef Emir Bernabe. Entering its premises is a multi-sensory journey that begins with a mural wall of local words, and a jeepney artwork that complements the lounge tables and displays. Inside, local motifs like latticework, hanging incandescent lamps, and a bamboo ceiling are reminiscent of the traditional bahay na bato.
Yet the real highlight would be the dishes—the Sinampalukang Lechon Manok is served with half-chicken roasted with lemongrass and herbs boiled into tamarind stock, while the El Bagnet (pictured above), Humba (porkbelly), and Beef Belly Karekare are must-trys. If you’re not in the mood for heavy dishes, you can go for merienda with their Salmon Roleta (spring rolls), Meaty Chichirya (crispy chips with tomato salsa), and Granada (bacon-wrapped cheese-stuffed green chilies with crumbled meat balls). And for dessert with a twist, they've got Chocknut Turon (pictured below). At United Street, Kapitolyo, Pasig City.
