This Healthy Lapu-Lapu Dish Is Your Next Dinner's Superstar

Headlined by Chef JP Anglo and Sharwin Tee, the second leg of Food Magazine's Food Tastings event this year paid homage to the wonderful cuisine of our motherland. Aptly entitled "Let's Cook Pinoy," the event gave the attendees a lot of wonderful ideas on how they can put a twist to classic Filipino recipes. Here's Chef JP's quirky take lapu-lapu:

Baked Lapu-Lapu with Pinoy Sambal by Chef JP Anglo

Ingredients:

800g lapu-lapu fillet

10 g banana leaf

40 g sili labuyo

40 g sili sigang

30 g red pepper flakes

60 g minced garlic

80 g garlic

45 ml oil

20 ml rice wine vinegar

30 g sugar

10 g salt

60 g lemongras stalks

45 g ginger

20 g tamarind

topping:

cherry tomatoes

onion red

spring onions

fried garlic

Procedure:

1. In a blender add in all your vegetables, oils, and vinegar, create a nice thick paste.

2. Get your banana leaf, place your lapu-lapu fillet and top it with your sambal paste.

3. Put it in the oven for 30 minutes at 350 degrees fahrenheit.

4. Serve it by opening your banana leaf, and topping it with freshly sliced onions, whole chery tomatoes, chopped spring onions and fried garlic
