“I look for the expression of the spirit and how it goes together with all the other ingredients in the drink,” says well-known cook-writer-blogger restaurateur Erwan Heussaff in an interview with Food Magazine. "The Fat Kid Inside" is an expert in this field, having mixed drinks since the age of 16. “I just understood that drinks are an important part of the dining experience just like the food presented.”
At one of his bars, Niner Ichi Nana, Erwan's concoctions are “all about experimenting with flavors, syrups, infusions, liquors, spirits and anything we can get our hands on.” Hence, the birth of unusual and ultra exciting cocktails like Spiced Daq with white rum, fresh limes and yes, curry. He adds, “We have a strong understanding of classical cocktails and can make them well. We apply that knowledge to the more crafty, seasonal and experimental cocktails.” Another noteworthy drink you must try: ETheir version of the Bloody Mary featuring, among other things, bacon, wasabi and ponzu.
